How to make Creamy Potato Salad:

Ingredients for Creamy Potato Salad:

4 medium sized boiled potato, peeled and cut into 1 inch chunks

1/2 cup low fat yogurt or you can use ¼ cup light sour cream

Salt to taste

Ground black pepper to taste

3/4 cup gluten-free mayonnaise

1 tsp lemon juice

2 tbsp low fat milk

1 tsp yellow mustard (optional)

1/2 small onion chopped

1 tbsp sugar

1/4 cup mixed chopped herbs such as parsley, basil and thyme

How to make Creamy Potato Salad:

  • Boil the potato, then drain well and let it cool for 15 min. Cut the potatoes into chunks.
  • In a bowl combine yogurt, mayonnaise, milk, lemon juice, chopped onions and mix to a creamy mixture.
  • Now gently toss potato with the creamy mixture. Add all herbs, salt and pepper.
  • Mix well to coat all the ingredient and chill it for 2-4 hr in refrigerator.
  • Serve this chilled potato salad in a salad dish.
  • If you are eggetarian, you can add 2 chopped hard boiled eggs, which will give the salad more delicious touch.
